Zucchini in Oil

The perfect zucchini in oil recipe with a picture and simple step-by-step instructions.

  • 1 Very large zucchini
  • 1,5 Vegetable onion
  • 4 Toes Garlic
  • 8 Sage leaves
  • 1 branch Rosemary
  • 1,5 Tl Salt
  • 5 Pinches Pepper
  • 1 pod Chilli, fresh
  • 150 ml White wine
  • 100 ml Vinegar
  • Olive oil to pour over
  • Olive oil for frying
  1. 1 person means 1 glass.
  2. Peel off the Zuchhini, but it doesn’t have to be. Take out the seeds. Cut into thicker slices.
  3. Chop the onion and roughly chop the garlic.
  4. Let the oil get hot in a pan. First fry the onions until translucent and then add the zucchini and chilli. Continue to stew with wine and vinegar. Add the rosemary, salt and pepper and the garlic.
  5. Make the zucchinis as soft as everyone likes. Then put in a large glass and top up with olive oil. A delicious side dish for grilling.
  6. Prepared this way, the zucchinis will stay in the fridge for a while and you will have a small supply.
