Zucchini in Oil
The perfect zucchini in oil recipe with a picture and simple step-by-step instructions.
- 1 Very large zucchini
- 1,5 Vegetable onion
- 4 Toes Garlic
- 8 Sage leaves
- 1 branch Rosemary
- 1,5 Tl Salt
- 5 Pinches Pepper
- 1 pod Chilli, fresh
- 150 ml White wine
- 100 ml Vinegar
- Olive oil to pour over
- Olive oil for frying
- 1 person means 1 glass.
- Peel off the Zuchhini, but it doesn’t have to be. Take out the seeds. Cut into thicker slices.
- Chop the onion and roughly chop the garlic.
- Let the oil get hot in a pan. First fry the onions until translucent and then add the zucchini and chilli. Continue to stew with wine and vinegar. Add the rosemary, salt and pepper and the garlic.
- Make the zucchinis as soft as everyone likes. Then put in a large glass and top up with olive oil. A delicious side dish for grilling.
- Prepared this way, the zucchinis will stay in the fridge for a while and you will have a small supply.
