Ingredients for 4 servings:
- 2 zucchinis
- 1 small melon(s) (honeydew melon)
- 1 pot of peppermint (approx. 50 grams)
- 4 tbsp vinegar, mild
- 8 tbsp oil (sunflower oil)
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
vegetarian and summery
Wash the zucchini and dice. Peel and seed the melon and scoop it into balls or dice it as well. Place everything in a bowl. Mix the vinegar and oil with the sliced mint and drizzle over the salad. Mix everything well. Season with salt and pepper and serve. Tip: If you like, you can also add fried chicken breast strips or simply serve it with baguette.
