Zucchini – Melon – Salad

Ingredients for 4 servings:

  • 300 g zucchini
  • ½ honeydew melon(s)
  • 250 g turkey breast in one piece
  • 2 tbsp rapeseed oil
  • salt and pepper
  • 2 tbsp vinegar (fruit vinegar)
  • 1 tbsp honey, liquid
  • 3 stalks of basil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the zucchini and cut into thin slices. Deseed the melon, cut into wedges, and peel. Cut the wedges into slices. Wash the turkey breast, pat dry, and slice. Fry the meat in 1 tablespoon of hot oil for 5 minutes. Season with salt and pepper, and remove. Brown the zucchini in the cooking oil, season with salt, and combine with the meat and melon. Combine the vinegar, salt, pepper, and honey, then whisk in 1 tablespoon of oil. Mix all ingredients with finely chopped basil leaves.
