Zucchini Noodles with Indonesian Curry Sauce

Ingredients
 

  • 2 Zucchini
  • 3 Green onions roughly chopped
  • 1 St Ginger about 1 cm
  • 1 bunch Fresh coriander
  • 1 Clove of garlic
  • 1 tsp Turmeric spice
  • 0,125 tsp Chili powder
  • 200 ml Coconut milk depending on how liquid you like the sauce
  • 200 ml Cocktail tomatoes for decoration

Instructions
 

  • Cut the zucchini into spaghetti-like "noodles" with a spiral or julienne cutter.
  • Put all ingredients, except for the zucchini noodles, in the blender and mix until you get a creamy sauce. Season to taste and, if necessary, season to taste.
  • Put the "noodles" in a bowl and pour the sauce over them. Mix everything well. Garnish with cocktail tomatoes and enjoy!
