Fish Balls with Sweet and Sour Salad

Sweet and sour salad

  • 1 Apple
  • 1 Carrot
  • 0,5 Cucumber
  • Rice vinegar
  • Salt
  • Black pepper from the mill
  • Sugar
  • Olive oil
  • Chopped herbs

  • 400 g Plaice
  • 1 Egg
  • 6 tbsp Breadcrumbs
  • Panko
  • 1 tsp Dill
  • 1 tsp Mustard powder
  • 0,5 Lemon
  • Freshly grated nutmeg
  • Salt
  • Rapeseed oil
  • Pepper from the grinder
  • 1 tsp Rasel Hanout

Dip

  • 0,5 cups Sour cream
  • Lemon zest
  • Rice vinegar
  • Finely chopped coriander
  • Salt
  • Sugar

Sweet and sour salad

  1. Slice the cucumber into fine slices, grate the carrot finely and the apple coarsely. Season with rice vinegar, salt, pepper, herbs, sugar and olive oil and let it steep.

  1. Free the plaice from bones and cut into small pieces – mix with breadcrumbs and egg to a fine paste – season with mustard powder, rasel hanout, lemon juice, salt, pepper, sugar, dill and nutmeg.
  1. Form small balls out of the mixture and turn in panko. Heat the rapeseed oil in the pan and fry the balls in it until golden brown. Drain on kitchen crepe.

Dip

  1. Season the sour cream with coriander, lemon zest, rice vinegar, salt and sugar.
