Zucchini pan with bread dumplings

Ingredients for 3 servings:

  • 400 g zucchini
  • ½ bunch parsley
  • 2 tbsp germ oil
  • 250 ml tomato juice
  • 1 tsp Italian herbs
  • 1 pack of bread dumplings (mini bread dumplings)
  • salt and pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Clean the zucchini and cut into sticks. Clean and chop the parsley. Heat oil in a pan. Sauté the zucchini. Add tomato juice and Italian herbs. Cook over medium heat for about 5 minutes. Season with salt, pepper, and sugar. Prepare the bread dumplings in boiling water according to the package instructions and drain. Add the dumplings to the zucchini pan and serve sprinkled with parsley, if desired.
