Ingredients for 2 servings:

  • 1 m.-large zucchini or 2 small
  • some olive oil
  • 4 eggs
  • n. B. Cheese, grated
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

quick and easy

Slice the zucchini and fry in olive oil in a pan. Season with salt and pepper. Beat the eggs and mix with the grated cheese. Pour the egg and cheese mixture over the zucchini and let it set in the pan. Serve with a green salad, bread, or boiled potatoes.
