Zucchini pancakes

Ingredients for 4 servings:

  • 250 g zucchini
  • 100 g cheese, grated
  • 100 g flour
  • 100 g ham
  • 3 eggs
  • salt and pepper
  • 6 tbsp oil for frying
  • some parsley, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash, trim, and finely grate the zucchini. Dice the ham. Mix all ingredients. Fry the batter in hot oil to make small pancakes. Serve with salad or potato soup.
