Zucchini pancakes

Ingredients for 1 servings:

  • 4 small zucchini
  • 4 eggs
  • 100 g flour
  • 100 g oat flakes
  • 4 tbsp oil for frying
  • e.g. breadcrumbs
  • salt and pepper
  • some lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, whisk the eggs with flour and oatmeal. Then, wash and dry the zucchini, and grate it into the egg mixture. Season well and use the mixture to make pancakes. They taste best with herb quark and fresh salad.
