Zucchini parcels with goat's cheese filling

Ingredients for 1 servings:

  • 3 zucchinis
  • 350 g goat’s cheese
  • 12 leaves mint, fresh
  • 1 lemon(s), organic
  • 1 garlic clove(s)
  • 2 tbsp olive oil
  • salt and pepper

A refreshing starter

Clean the zucchini and trim off both ends but do not peel them. Cut lengthwise into fine strips, preferably using a mandolin. Arrange three to four particularly attractive strips in a star shape on a plate. This quantity is enough for eight to ten strips. Chop the remaining zucchini strips into very small pieces. Chop the mint leaves. Grate the zest from the lemon. Crush the garlic clove. Mix with the goat’s cheese and olive oil and season with pepper and salt. Place about 2 tablespoons of the mixture into the center of each zucchini star. Carefully fold the zucchini strips over the mixture without applying pressure, turn over and decorate with a mint leaf. Serve slightly chilled. I use organic zucchini for this dish.
