Ingredients for 4 servings:
- 750 g zucchini
- 250 g onion(s)
- 1 tbsp salt, coarse
- 250 g sugar
- ¼ liter vinegar (white wine vinegar)
- 1 tbsp mustard, medium hot
- 1 tbsp curry
- 1 tsp sweet paprika powder
- ½ tsp cayenne pepper
Instructions
Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes
Wash and dry the zucchini, removing the stems and flower ends. Finely dice the zucchini and onions. Mix with the salt and let it sit, covered, overnight. Place the vegetables in a saucepan, add the sugar and vinegar, and simmer for about 45 minutes. Stir occasionally. Add the spices and cook for another 10 minutes. While the relish is still hot, pour it into sterilized screw-top jars and immediately turn them upside down. Let it cool. We love eating this relish as a side dish with stir-fries or grilled dishes.
