Zucchini rolls with feta cheese or mozzarella

Ingredients for 2 servings:

  • 1 large zucchini
  • 1 pkt. sheep’s cheese or feta cheese or alternatively 2 balls of mozzarella
  • some olive oil
  • Savory or oregano
  • salt and pepper
  • Paprika powder, sweet

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the zucchini and cut lengthwise into thin, long slices. Season the zucchini slices on both sides with salt, pepper, paprika, and savory (or oregano, if desired). Heat a little olive oil in a pan and fry the zucchini slices for a while, until they are lightly browned and slightly translucent. Then remove from the pan and set aside. Preheat the oven to 180°C. Cut the feta cheese or mozzarella into thin slices and place on the zucchini slices. Then roll the zucchini slices up from one side to the end, secure with a toothpick, and place on a baking sheet. Place the zucchini rolls in the hot oven for about 15-20 minutes. Remove when the cheese has melted slightly. Serve with ciabatta bread with herb butter and a delicious salad. They also taste great cold.
