Ingredients for 4 servings:

  • 2 zucchinis
  • 1 onion(s), finely chopped
  • 150 g cheese (Emmental), finely diced
  • 1 bunch of chives, finely chopped
  • ½ tsp thyme, shredded
  • 2 tbsp vinegar
  • 1 tsp mustard (tarragon mustard)
  • 1 tbsp capers, finely chopped
  • oil
  • salt and pepper

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash the zucchini and cut into thin strips. Briefly fry the strips in a little heated oil. Then season with salt, pepper, and thyme, and cover and simmer for about 10 minutes. Prepare a marinade with 2 tablespoons of oil, onion, mustard, tarragon vinegar, and capers. Season to taste with salt and pepper. Mix the zucchini and cheese with the marinade and let it sit, covered, for about 2 hours before serving.
