Ingredients for 1 servings:

  • 2 kg zucchini, peeled
  • ½ kg zucchini, unpeeled
  • 3 red bell peppers
  • 1 kg onion(s)
  • 1 kg sugar
  • ¾ liter white wine vinegar
  • 7 tsp salt
  • 4 tsp, heaped mustard seeds
  • some black pepper
  • 2 tsp, heaped curry powder

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

sweet and sour

Halve the zucchini lengthwise and remove the seeds. Cut the zucchini into chunks. Chop the peppers and onions and place them in a large pot with the zucchini. Add the wine vinegar, sugar, salt, mustard seeds, black pepper, and curry powder. Bring everything to a boil and simmer vigorously for three minutes. Spoon the hot zucchini salad into jars, seal them tightly, and turn them upside down until they cool.
