Zucchini salad with carrots

Ingredients for 4 servings:

  • 350 g zucchini
  • 250 g carrot(s)
  • 1 small apple
  • ½ onion(s)
  • 2 tbsp cream
  • 2 tbsp oil
  • ½ tsp salt
  • 2 tbsp vinegar
  • some water if needed
  • e.g. chopped parsley for sprinkling

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Total time approx. 40 minutes

Wash the vegetables and fruit. Peel the carrots and slice them into strips along with the apple and zucchini. Peel and finely chop the onion. Make a dressing with the remaining ingredients, pour over the salad, and mix gently. Sprinkle with parsley. Let the salad stand for about 20 minutes before serving.
