Ingredients for 4 servings:

  • 400 g zucchini
  • 1 tbsp clarified butter
  • 1 onion(s)
  • 250 ml vegetable stock
  • salt and pepper
  • some thyme leaves, fresh

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

without cream or crème fraîche

Coarsely grate the zucchini. Dice the onion. Heat the clarified butter in a saucepan and sauté the diced onion until translucent. Add the grated zucchini and sauté. Deglaze everything with the vegetable stock and simmer for 5 minutes. Remove 1/3 of the grated zucchini. Puree the remaining zucchini with the stock. Return the grated zucchini to the sauce. Season the sauce with salt, pepper, and thyme.
