Simple apple pie

Ingredients for 1 servings:

  • 240 g butter, soft or margarine
  • 240 g powdered sugar
  • 6 m.-sized eggs, separated
  • 400 g flour, grippy
  • 4 tsp baking powder
  • 10 tbsp milk
  • 4 m.-large apples, sour
  • some jam, pureed, warmed apricot
  • Salt
  • lemon juice

Working time approx. 15 minutes; Total time approx. 15 minutes

Recipe from my school days

Preheat the oven to 180°C (top/bottom heat). Grease and flour a 26cm springform pan. Beat the softened butter or margarine until fluffy. Stir in the egg yolks and icing sugar alternately, then add a little milk. Then stir in the flour mixed with the baking powder and the remaining milk. Finally, beat the egg whites with a pinch of salt until stiff and carefully fold in. Pour the batter into the pan. Peel and halve the apples, and remove the cores. Drizzle with lemon juice and cut a slit in the tops. Now add the apple halves to the batter and press down. Bake in the preheated oven on the middle rack for 40-50 minutes (test with a skewer). Brush with apricot jam while still warm, and sprinkle with icing sugar once cooled.
