Zucchini smoothie à la Gabi

Ingredients for 4 servings:

  • 2 small zucchini (approx. 250 g each), peeled and finely chopped
  • 1 bunch lemon balm, leaves picked, some set aside for garnish
  • 400 ml apple juice, naturally cloudy
  • 400 ml ginger ale
  • some ice cubes

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Finely puree the zucchini, lemon balm and apple juice with a hand blender, pour into four glasses, top up with ginger ale and serve garnished with ice cubes and lemon balm leaves.
