Ingredients for 4 servings:
- 2 small zucchini (approx. 250 g each), peeled and finely chopped
- 1 bunch lemon balm, leaves picked, some set aside for garnish
- 400 ml apple juice, naturally cloudy
- 400 ml ginger ale
- some ice cubes
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Finely puree the zucchini, lemon balm and apple juice with a hand blender, pour into four glasses, top up with ginger ale and serve garnished with ice cubes and lemon balm leaves.
