Ingredients for 8 servings:

  • 1 egg(s), hard-boiled
  • 300 g zucchini
  • 1 onion(s)
  • 2 garlic cloves
  • 1 tsp olive oil
  • 1 bunch of parsley
  • 2 tbsp sour cream
  • 1 tbsp lemon juice
  • salt and pepper
  • Cayenne pepper
  • Paprika powder
  • curry powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

suitable as a low-fat spread or dip

Clean and wash the zucchini, finely grate it, season it lightly with salt, and let it rest for about 5 minutes. Clean and finely dice the onions and garlic cloves, then sauté them in olive oil until translucent. Add the grated zucchini and simmer for about 10-15 minutes, stirring constantly, until the resulting liquid has evaporated. Let it cool. Wash the parsley, pat it dry, finely chop it, and add it. Dice the hard-boiled egg and stir it in with the sour cream. Season generously with lemon juice and the spices, and puree. It’s a popular spread or dip at any party!
