Zucchini waffles

Ingredients for 3 servings:

  • 600 g zucchini, medium-finely grated
  • 150 g flour
  • 5 tbsp cream or milk
  • 4 eggs
  • salt and pepper
  • garlic powder
  • Nutmeg, freshly grated
  • Clarified butter for the waffle iron

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 19 minutes

Grate the zucchini medium-finely, squeeze the excess water, and place it in a bowl. Combine the eggs and cream or milk, season with salt, pepper, garlic powder, and nutmeg to taste, and mix. Stir in the flour to form a nice, thick batter. Fold in the squeezed zucchini and mix well. Melt the clarified butter in a hot waffle iron. Spread the zucchini batter in the waffle iron with a spoon to form a nice waffle. Bake until golden brown. Serve with a nice leaf salad.
