Zuccini Tomato Soup with Smoked Tofu
The perfect zuccini tomato soup with smoked tofu recipe with a picture and simple step-by-step instructions.
- 200 g Smoked tofu
- 1 Fennel fresh
- 2 Zucchini fresh
- 200 g Chickpeas
- 6 size Tomatoes
- 200 ml Water
- 1 tbsp Bouillon
- 1 tbsp Spice mix – pizza e pasta
- Cut smoked tofu and fennel into strips and fry in a pan for 10 minutes. Mix with the spice mixture.
- Halve the zucini and cut into rings, fry and add the chickpeas.
- Dice the overripe tomatoes. Add to the zucchini mixture and fill up with the water. Add the broth and simmer for about 10 minutes.
- Arrange the soup on the plate and put the tofu-fennel mix on top.
