Zuccini Tomato Soup with Smoked Tofu

The perfect zuccini tomato soup with smoked tofu recipe with a picture and simple step-by-step instructions.

  • 200 g Smoked tofu
  • 1 Fennel fresh
  • 2 Zucchini fresh
  • 200 g Chickpeas
  • 6 size Tomatoes
  • 200 ml Water
  • 1 tbsp Bouillon
  • 1 tbsp Spice mix – pizza e pasta
  1. Cut smoked tofu and fennel into strips and fry in a pan for 10 minutes. Mix with the spice mixture.
  2. Halve the zucini and cut into rings, fry and add the chickpeas.
  3. Dice the overripe tomatoes. Add to the zucchini mixture and fill up with the water. Add the broth and simmer for about 10 minutes.
  4. Arrange the soup on the plate and put the tofu-fennel mix on top.
