Zurich Apple Cake

Ingredients for 1 servings:

  • 200 g flour
  • 80 g butter
  • 1 pinch of salt
  • 1 tsp vinegar
  • 1 dl water
  • 2 small apples
  • 150 g almond(s), grated
  • 80 g sugar
  • 1 tsp cinnamon
  • 1 egg(s)
  • 2 tbsp currant jelly
  • 4 apples

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 25 minutes

Make a grated dough from flour, butter, salt, vinegar, and water and let it rest in the refrigerator for at least 15 minutes. Then roll out the dough thinly and line a round baking sheet with it. For the filling, grate the two small apples, cored but still with the skin, using a Bircher grater. Mix the almonds, sugar, beaten egg, cinnamon, and the raw grated apples together and spread this mixture on the pastry base. Peel and halve the other apples, make several slits on the round side, and place them, rounded side up, on the filling. Spread the apple halves with blackcurrant jelly and bake the pie like a regular tart (fruit tart) in the center of the oven until the pastry pulls away from the sides of the baking sheet and is nice and crispy on the bottom (approx. 35-40 minutes at 190°C).
