Ingredients for 1 servings:
- 250 g sugar
- 250 g margarine
- 5 eggs
- 250 g flour
- 1 packet of baking powder
- 2 tbsp cocoa powder
- 4 cups of cream
- 12 tbsp lemon juice
- 4 tbsp sugar
- powdered sugar
- lemon juice
- Chocolate shavings
Instructions
Working time approx. 30 minutes; Rest period approx. 3 days; Cooking/baking time approx. 1 hour; Total time approx. 3 days 1 hour 30 minutes
Make a batter from sugar, margarine, eggs, and the flour mixed with baking powder. Bake half of the batter in a springform pan lined with baking paper (175°C top/bottom heat, approx. 30 min., do the skewer test). Stir the cocoa powder into the other half and bake. Once cooled, cut both layers in half to make 4 layers. Whisk the cream with 12 tablespoons of lemon juice and 4 tablespoons of sugar until stiff peaks form. Fill the layers with this mixture. Start with the dark layer, then light, dark, and light. Don’t cover the top layer with cream, just the edges. Make a glaze from the powdered sugar and lemon juice. Spread it on the top layer and then sprinkle the chocolate shavings on top. Refrigerate the cake for 3 days. It will soak in perfectly, is refreshing, and you won’t have to worry about it the day you need it.
