Ingredients for 1 servings:

  • 160 g oat flakes, fine
  • 2 bananas, ripe
  • 1 handful of dried fruit or chocolate drops

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Mash the two bananas with a fork. If they’re not soft enough, you can add a spoonful of honey or agave syrup. Then mix the bananas with the oats. This completes the dough. You can, of course, add chocolate chips or dried fruit to taste. I always use cranberries and raisins. I soak them in a cup of hot water beforehand so they’re easier to cut. I then chop them and add them to the dough. Form the dough into balls and flatten them slightly or shape them into another shape on a baking sheet lined with baking paper. I usually get 12 manageable cookies. Bake the cookies in a preheated oven at 180°C (convection oven) for about 20 minutes on the middle rack, then let them cool. If you prefer them a little softer, you can leave them in for 10-15 minutes. These cookies are perfect as a snack or for your lunchbox!
