Indian Prawn Curry

Ingredients for 4 servings:

  • 750 g peeled king prawns
  • ¼ cup(s) oil
  • 2 onions, chopped
  • 3 cloves garlic, crushed
  • 2 tsp ginger, grated
  • 1 tsp curry powder
  • 1 tsp chili powder
  • 1 tsp turmeric
  • ¼ tsp cinnamon
  • ½ cup(s) dry white wine (approx. 100 – 125 ml)
  • salt and pepper
  • 1 tsp lemon juice
  • 800 ml coconut cream or milk
  • Coriander, chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Heat oil in a wok (or large frying pan). Sauté onions, garlic, and onions until translucent. Add curry powder, chili powder, turmeric, and cinnamon and season to taste. Simmer gently for about 3 minutes. Add white wine and lemon juice. Reduce by half. Stir in coconut cream (or milk). Bring to a boil and cook for 5 minutes. Add king prawns to the curry mixture and simmer for about 3 minutes, until the prawns are cooked. Serve over rice, scattered with coriander leaves.
