Ingredients for 4 servings:

  • 2 kg tomatoes
  • 250 g onion(s)
  • some tomato paste
  • 6 cloves garlic
  • 4 tbsp olive oil
  • 4 tbsp Balsamic vinegar, dark
  • 4 sprigs of thyme
  • 3 sprigs of basil
  • some lovage
  • 5 bay leaves
  • 1 orange(s), grated peel
  • 5 cloves
  • salt and pepper
  • Sugar

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Score the tomatoes crosswise on the surface with a knife and briefly blanch them in boiling water, then rinse with cold water and peel off the skin. Halve the tomatoes, remove the stem ends, and dice them. Meanwhile, heat the oil and cook the finely chopped onion until translucent. Deglaze with balsamic vinegar and add the remaining ingredients. Simmer for 15-20 minutes over low heat. Season with salt, pepper, and sugar to taste. My favorite tomato sauce recipe because it’s very flavorful.
