Ingredients for 4 servings:

  • 2 zucchini, or one that has grown too large
  • 100 g sweet cream
  • 50 g Parmesan
  • 2 stalks of basil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

also for using up leftover zucchini that has grown too large

Peel the zucchini, remove the seeds, chop finely, and cook in a little salted water. Place in a sieve and let the water drain. Place the washed and torn basil leaves in a tall, narrow bowl, add the drained, cooked zucchini, and blend thoroughly. Then pour in the cream, add the cheese, and mix everything well. If the sauce has become too cold, reheat briefly, stirring constantly. This sauce tastes great with pasta, but also as a side dish with potatoes and meat.
