Mediterranean tomato sauce made from fruity tomatoes

Ingredients for 2 servings:

  • 3 tomatoes, ripe, aromatic
  • 1 large onion(s)
  • 3 cloves garlic
  • 1 tbsp tomato paste
  • salt and pepper
  • Herbs of Provence or basil
  • olive oil
  • chili flakes

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Dice the tomatoes, peel and dice the onion, and peel and quarter the garlic cloves. Heat the olive oil in a pan and first fry the onions until translucent. Add the diced tomatoes and garlic, cover, and simmer gently for 5 minutes, stirring occasionally. Add the tomato paste, stir, and simmer gently for another 5 minutes. Season with salt, pepper, Provençal herbs or basil, and chili flakes. Cover and simmer gently for another 5-10 minutes. Tastes very fruity with ripe, aromatic tomatoes. Perfect with pasta, boiled potatoes, or on its own.
