Sicilian tomato sauce

Ingredients for 4 servings:

  • 1 small can of tomatoes
  • 1 pack of tomatoes, pureed
  • 1 tbsp tomato paste
  • 1 small can of peas
  • 1 large onion(s)
  • 2 garlic cloves
  • 2 tbsp olive oil
  • salt and pepper
  • Sweet paprika powder
  • Oregano, shredded
  • basil, shredded
  • 1 tsp sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dice the onions and garlic. Remove the whole tomatoes from the tomato can with a fork and mash them in a deep plate. Reserve the juice in the can. Heat the olive oil and sauté the diced onions and garlic until translucent. Remove the pot from the heat, add the crushed tomatoes, passata, and the juice from the tomato can, fill the can with water, and add it to the pot. Return the pot to the heat. Season with tomato paste, salt, pepper, paprika, oregano, basil, and sugar. Simmer on low heat with the lid on for about 1 hour. Important: Stir occasionally. Add the peas, stir, and simmer for another 15-20 minutes. Add a little more water if desired. Serve with pasta, gnocchi, or rice.
