Ingredients for 1 servings:
- 400 g walnuts
- 125 g butter, soft
- 100 g brown sugar
- 1 vanilla pod(s)
- 150 g whole wheat flour
- 2 pinches of salt
- 2 egg yolks
- 50 g brown sugar, for rolling

for approx. 70 pieces
Preheat the oven to 175°C (top/bottom heat). Finely grind 150g of the walnuts. (Place the remaining halves on top of the cookies.) Cream the butter, sugar, and scraped vanilla seeds with the whisk attachment of a hand mixer until creamy. Stir in the ground walnuts, whole-wheat flour, salt, and egg yolk. Form the dough into cherry-sized balls with your hands and roll them in brown sugar. Place on a baking sheet lined with baking paper and press a walnut half into each one. Bake in the middle rack of the oven for about 12 minutes. Makes about 70 cookies.
