Ingredients for 1 servings:

  • 1 banana(s), overripe
  • 75 ml rapeseed oil
  • 125 g sugar
  • 150 g flour
  • ½ tsp baking soda
  • 1 pinch of salt
  • 150 g oat flakes
  • 2 tbsp soy milk (soy drink) (vanilla) or plant milk
  • 40 g walnuts, chopped
  • 20 g chocolate drops, vegan

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

American recipe with banana and oat flakes, vegan, makes about 12 pieces

Preheat the oven to 180°C fan/convection oven. Mash the banana (it can already be very brown or black) in a bowl with a fork. Stir in the oil and sugar. Mix the flour, baking soda, and salt together and mix well. Add the oats and walnuts and mix well. Also add the soy milk. Form 10 to 12 cookies and place them on a baking sheet lined with baking paper. Don’t place them too close together, as they will still rise. Press the chocolate chips into the cookies. Place in the oven for about 10 to 12 minutes. When they have taken on a nice brown color, remove and let cool.
