Ingredients for 3 servings:

  • 1 kg flour
  • 600 ml water
  • 40 g yeast, fresh
  • 20 g sugar
  • 20 g salt
  • 50 ml olive oil

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Sift the flour into a bowl and make a well in the center. Dissolve the sugar and yeast in 600ml of lukewarm water and pour into the well. Dust with flour and knead into a pre-dough, letting it rise until it has significantly increased in size. Add the salt and oil and knead everything into a smooth dough. Divide the dough into 3 parts and shape into loaves. Let the loaves rise again until they have roughly doubled in size. Bake at 210°C fan/convection oven; the loaves should be golden brown.
