Ingredients for 1 servings:
- 200 ml water, lukewarm
- 4 tbsp milk
- 1 cube of fresh yeast
- 35 g sugar
- 10 g salt
- 80 g butter, melted
- 500 g wheat flour type 550
- 1 m.-sized egg(s)

- 2 tbsp water
- 2 tbsp milk
- sesame

In a bowl, mix the lukewarm water with the milk and sugar. I use my food processor for this. Crumble in the yeast cube. Fresh yeast is important here; the rolls won’t rise as well with dried yeast. Let the mixture rise for about 10 minutes. Then add the flour, salt, 1 egg and the melted butter and knead on high for about 5 minutes until you have a smooth dough. Cover the dough with a tea towel and let it rise for about 1 hour in a warm place. After this hour, divide the dough into 10 pieces of about 90 g each and form them into balls on a baking sheet lined with baking paper. The dough is very sticky, so it’s best to lightly flour your work surface and your hands. Now cover the rolls again and let them rise for another hour. In the meantime, mix 1 egg with 2 tablespoons of milk and 2 tablespoons of water. Then carefully brush the rolls with the egg-milk mixture and sprinkle with some sesame seeds. Bake the rolls for approximately 16-20 minutes in an oven preheated to 200°C using top/bottom heat, then let them cool slightly. These rolls are perfect with burgers or pulled pork, or even for breakfast with Nutella.
