Ingredients for 1 servings:

  • 500 g flour
  • 150 ml water, lukewarm
  • 150 ml milk, lukewarm
  • 10 g salt
  • 10 g sugar
  • 21 g yeast or 1 packet of dry yeast
  • 35 g butter
  • 1 tbsp applesauce (can be used without)

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 40 minutes; Total time approx. 3 hours

Dissolve the yeast in a glass with lukewarm water, add the salt, and set the glass aside for about 30 minutes. Then, combine all the remaining ingredients in a bowl, add the yeast, salt, and water, and knead everything thoroughly. Knead the dough vigorously for at least 5 minutes; 7-10 minutes is best. This allows the flour to bind and the gluten to develop. Cover the dough and let it rest in a warm place for at least 1.5 hours. The dough will be quite sticky, but this is completely normal; it’s very sticky, but that’s how it’s supposed to be. Do not add any more flour. After resting, knead the dough again as thoroughly as possible. Place the dough in a loaf pan or special bread pan and let it rise, covered, for another 45 minutes. After rising, place the pan in the preheated oven at 220°C (top/bottom heat). After about 5 minutes, reduce the temperature to 180°C and bake for about another 40 minutes. The applesauce gives the bread a special crumb and prevents it from becoming too dry. However, if you don’t want to open a jar, you can omit the applesauce or replace it with some sourdough, if you have it. This sweet toast is very light, delicious, and keeps well for a long time. The bread can also be made entirely in a bread maker.
