Ingredients for 3 servings:
- 400 g wheat flour
- 200 g rye flour
- 15 g salt
- 20 g fresh yeast
- 330 ml beer (Guinness), lukewarm
- 120 ml water, lukewarm
- possibly flour for dusting
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 2 hours 10 minutes

Mix the beer and water. Dissolve the yeast in the lukewarm mixture. Combine the flour and salt in a bowl and add the yeast water. Mix with a fork until a smooth dough forms. Then cover and let rise for 1.5 hours. The dough should have increased in volume considerably. Cut three baguettes or several rolls from the dough and place them in a baguette or roll pan. Do not knead, shape, or otherwise work the dough. Dust with flour to taste. Bake at 240°C in a preheated oven on the middle rack with a bowl of water on the bottom of the oven for about 25 minutes.
