Spelt-rye bread

Ingredients for 1 servings:

  • 400 g spelt flour
  • 200 g rye flour
  • 220 ml water, lukewarm
  • 1 packet of dry yeast
  • 1 dash of olive oil
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Mix the spelt and rye flour together in a bowl. Add the dried yeast, salt, and a dash of olive oil. Fit a hand mixer with the dough hook and stir in about 220 ml of lukewarm water. If the dough is too runny, add a little more flour, or if it’s too tough, add a little water. Cover the dough with a clean tea towel and let it rise in a warm place for 1 hour. After the resting time, shape the dough into a loaf of bread or place it in a loaf pan. Cover and let rise for another hour, until the dough has doubled in size. Preheat the oven to 150°C. Brush the bread with a little olive oil, place it in the oven, and bake for about 45 minutes. Let it cool. If the bread sounds hollow when tapped, it’s done.
