Italialady's quince – mango jam with orange juice

Ingredients for 1 servings:

  • 700 ml juice (quince juice)
  • 300 ml orange juice
  • 1 large mango(s), cut into small cubes
  • 1 packet of gelling sugar (3:1)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Homemade, not too sweet

Cook the mango cubes in the quince and orange juice until soft. If you don’t like chunks, you can puree everything at this point. Otherwise, stir in the gelling sugar, bring to a boil, and simmer for 4 minutes according to the instructions. Pour into jars while still hot and seal immediately. This jam came about because I had some quince juice in the freezer. Since I didn’t have a whole liter, I mixed it with store-bought orange juice and a very ripe mango. I used the 3:1 gelling sugar because I had it at home. I think it would also work with the 2:1 sugar.
