Ingredients for 10 servings:
- ¾ cup(s) peanut butter with chunks
- ¾ cup(s) light honey
- 4 ½ cup(s) cereal (Rice Krispies), light
- 2 liters of ice cream (vanilla)
Instructions
Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes
In a large bowl, cream the peanut butter and honey until creamy, then mix in the Rice Krispies. Lightly grease a large roasting pan. Pour three-quarters of the mixture into the pan, press down firmly, and freeze for about 15 minutes. Meanwhile, let the vanilla ice cream thaw slightly. Remove the roasting pan from the freezer, spread the ice cream on top, and sprinkle with the remaining Rice Krispies. Freeze for two to three hours, or until the ice cream is hard. Cut into cubes and serve. Decorate with chocolate sauce, whipped cream, fruit sauce, M&Ms, and more, as desired. A hit at any child’s birthday party!
