Ingredients for 2 servings:
- 1 chicory
- 1 blood orange(s) or orange
- 1 banana(s)
- ½ small onion(s), red
- 2 tbsp cashews, chopped, unsalted, or walnuts
- ½ avocado(s)
- 1 tbsp herb vinegar
- 1 tbsp oil, e.g. sunflower or nut oil
- some lemon juice
- 1 tbsp honey, liquid, e.g. fir honey
- some cress
- some cinnamon powder
- Salt
- Pepper from the mill
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
With cashews, avocado and bananas
Cut the chicory into strips. Chop the blood orange and banana. Finely chop half a small red onion and place everything in a salad bowl. Scoop out half an avocado and add it to the salad. Drizzle with a little lemon juice. Add some cress, cashews, oil, herb vinegar, and honey, and mix. Season the salad with cinnamon, salt, and pepper to taste. Garnish with chopped cashews and/or cress, if desired.
