Blood orange chicory salad

Ingredients for 2 servings:

  • 1 chicory
  • 1 blood orange(s) or orange
  • 1 banana(s)
  • ½ small onion(s), red
  • 2 tbsp cashews, chopped, unsalted, or walnuts
  • ½ avocado(s)
  • 1 tbsp herb vinegar
  • 1 tbsp oil, e.g. sunflower or nut oil
  • some lemon juice
  • 1 tbsp honey, liquid, e.g. fir honey
  • some cress
  • some cinnamon powder
  • Salt
  • Pepper from the mill

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

With cashews, avocado and bananas

Cut the chicory into strips. Chop the blood orange and banana. Finely chop half a small red onion and place everything in a salad bowl. Scoop out half an avocado and add it to the salad. Drizzle with a little lemon juice. Add some cress, cashews, oil, herb vinegar, and honey, and mix. Season the salad with cinnamon, salt, and pepper to taste. Garnish with chopped cashews and/or cress, if desired.
