Fruity summer salad

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 2 kiwis, ripe
  • ½ honeydew melon(s)
  • 1 large beefsteak tomato(s)
  • Radicchio, a few leaves
  • Lettuce, some leaves
  • 4 sprigs of mint
  • 2 tbsp vinegar (honey vinegar)
  • Salt
  • Tabasco
  • 4 tbsp extra virgin olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the cucumber, halve lengthwise, remove the seeds, and slice. Peel the kiwis, halve lengthwise, and slice. Peel and deseed the melon, remove the stems from the tomatoes, and dice both. Mix the vinegar with salt and Tabasco, then stir in the oil. Toss everything with the salad and serve with a few lettuce leaves. Garnish with mint leaves. Serve with buttered whole-grain bread. This is the perfect meal for hot summer days.
