Ingredients for 4 servings:
- 500 g bacon, sliced
- 2 tbsp maple syrup
- 60 g sugar, brown, soft (muscovado)
- 2 tsp Dijon mustard
- ½ tsp coarse salt
- ¼ tsp cayenne pepper
Instructions
Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
1. Preheat oven to 180°C. Wrap a baking sheet with aluminum foil and place a wire rack on top. 2. In a large bowl, combine the maple syrup, brown sugar, Dijon mustard, salt, and cayenne pepper. Add the bacon to the bowl and toss to coat each slice completely with the maple syrup marinade. Marinate for 15 minutes. 3. Arrange the bacon slices in a single layer on the rack, without overlapping. Bake on the middle rack of the oven for about 20 minutes. Depending on your oven, the bacon may be done sooner; in others, it will take another 10 minutes. The slices should look dark (but not burnt) and crispy. 4. Once cooked, remove from the oven and let cool for 5 minutes. Do not let them cool on the rack for too long, or they will stick to the rack. When they are cool enough to handle, you can cut the bacon whole or into small pieces and serve at room temperature.
