White Chocolate Coconut Pudding

Ingredients for 4 servings:

  • 500 ml milk
  • 100 g chocolate, white
  • 1 tbsp sugar
  • 2 egg yolks
  • 2 egg whites
  • 40 g cornstarch
  • 50 g desiccated coconut

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Beat the sugar and egg yolks until frothy. Beat the egg whites until stiff peaks form. Combine 1/8 cup of milk with the cornstarch. Pour the remaining milk into a saucepan and melt the chocolate. Add the desiccated coconut and bring to a boil. Once the mixture boils, stir in the cornstarch and bring to a boil until the pudding thickens (this happens quickly!). Remove the pan from the heat and stir in the egg yolks. Now fold in the stiff egg whites until the pudding has a creamy consistency. Can be eaten hot or cold.
