Ingredients for 4 servings:
- 4 egg yolks
- 6 egg whites
- 500 ml milk
- 250 g flour
- 125 g sugar
- 300 g blueberries (doesn’t have to be fresh, frozen is fine)
- Butter, for baking
- Powdered sugar, for sprinkling
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Whisk the egg yolks with flour and milk to form a batter. Beat the egg whites, add the granulated sugar, and stir the egg whites into the batter. Melt the butter in a pan and pour in the batter. Sprinkle the blueberries over the batter and bake in a preheated oven at approximately 180°C for about 15 minutes. Tear the finished Schmarren into pieces, sprinkle with powdered sugar, and serve!
