Apple fritters

Ingredients for 5 servings:

  • 500 g flour (smooth), 250 ml milk
  • 40 g yeast
  • 60 g sugar
  • 1 pinch of salt
  • 4 egg yolks
  • 50 g butter
  • 750 g apples
  • 1 egg white
  • sugar and
  • Cinnamon
  • Fat for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Sift flour into a bowl and make a well. Heat the milk and dissolve the yeast in it. Pour the flour into the well, add a pinch of sugar, dust with a little flour, and cover. Let rise for 30 minutes. Add the remaining sugar, salt, and egg yolk. Place small pieces of butter on top. Knead everything into a smooth dough. Cover and let rest. Then knead thoroughly again and roll out into a rectangle on a floured kitchen towel. Core and peel the apples, and cut into small cubes. Spread them over the dough. Brush the edges of the dough with the beaten egg white. Roll up the dough and cut into slices about 2 cm thick. Let rise for another hour under a towel. Fry in hot oil. Drain on kitchen towel. Sprinkle with cinnamon sugar while still warm.
