Cheese meatloaf and homemade French fries

Ingredients for 2 servings:

  • 800 g minced meat, mixed
  • 500 g potatoes
  • 1 roll
  • ½ bunch parsley
  • 4 sprigs of oregano
  • 100 g dried tomatoes
  • 3 eggs, size M
  • 3 tbsp tomato paste
  • 250g bacon
  • 200 g Cheddar cheese
  • 3 gherkins
  • 1 tbsp olive oil
  • 1 tsp paprika powder
  • 2 tbsp milk
  • salt and pepper

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours 10 minutes

Soak the bread roll in milk and then squeeze out the excess water. Wash the parsley, spin dry, and roughly chop. Wash the oregano, spin dry, and roughly chop the leaves. Roughly chop the sun-dried tomatoes. Peel the onion and finely dice. Peel, wash, and thinly dice the potatoes. Cut the bacon into thin strips. Cut the cheddar cheese into coarse strips. Cut the gherkins into coarse strips. In a large bowl, knead the ground beef with the eggs, squeezed bread roll, tomato paste, parsley, tomatoes, and onions into a dough and season with salt and pepper. Place the bacon into a rectangle on a baking sheet lined with baking paper. Spread the dough evenly over the bacon, leaving 2 cm free around the edges. Place the cheese strips and gherkin strips in the center of the dough. Then roll up the dough using the baking paper. Press the open edges together and press the bacon down firmly. Then bake the meatloaf in a preheated oven at 160°C (convection oven) for about 1.5 hours. For the fries, combine olive oil, paprika, and a pinch of salt in a freezer bag. Add the potato sticks to the bag, tie the bag, and mix everything well. Place the fries on a baking sheet and add the meatloaf to the oven for the last 45 minutes. Serve the meatloaf and fries on plates and serve immediately while hot.
