Quark pancakes with vanilla cherries

Ingredients for 3 servings:

  • 2 tbsp butter (approx. 20 g)
  • 4 eggs
  • 3 tbsp sugar
  • 2 tbsp semolina
  • ½ tsp baking powder
  • 5 tbsp milk
  • 250 g quark (low-fat quark)
  • 2 tbsp oil
  • 1 jar cherry(s) (720 ml)
  • ½ pack of pudding powder (vanilla flavor), or sauce powder
  • 150 g yogurt (vanilla flavor), or pure

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Melt the butter over low heat. Beat the eggs and sugar until fluffy. Stir in the semolina, baking powder, milk, butter, and half of the quark. Heat the oil in a pan. Cover the batter and bake for about 10 minutes. Drain the cherries. Retain the juice and bring to a boil. Mix the custard or sauce mix with 3 tablespoons of water. Stir into the juice and bring back to a boil briefly. Fold in the cherries and let everything cool. Slide the pancake onto a flat pan lid. Turn upside down and bake in the pan for about 8 minutes until golden brown. Stir in the remaining quark and yogurt until smooth. Cut the pancake into large pieces. Serve with vanilla cherries and yogurt.
