Ingredients for 4 servings:

  • 750 g apples
  • 300 g flour
  • 3 eggs
  • ½ liter of milk
  • some salt
  • Fat, for frying
  • Sugar, to taste

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Make a batter from flour, eggs, salt and milk, wash, peel and finely slice the apples. Heat the fat in a saucepan. Pour in a 1cm thick layer of batter, let it bake slightly, then scatter the prepared apples on top. Cover and let it bake briefly, turn the Apfelschmarrn over and let it bake lightly on the other side too, then cut into pieces and bake thoroughly, turning frequently. Place the finished Schmarren in a covered pan, sprinkle with a little sugar if desired, and let it simmer briefly over low heat. Transfer the Apfelschmarrn to plates, sprinkle with sugar (icing sugar, cinnamon) as desired, and serve with apple sauce, fruit juice or jam (cranberry).
