Evi's spinach, mushroom, and ham rolls

Ingredients for 2 servings:

  • 350 g spinach, frozen, unseasoned
  • 1 tbsp butter
  • 1 large onion(s)
  • 1 large garlic clove(s)
  • 200 g mushrooms, sliced
  • 1 shot of white wine
  • 2 tbsp soy sauce
  • 1 dl cream
  • 3 tbsp cream cheese
  • 1 pinch of nutmeg
  • e.g. salt and pepper
  • 6 slice(s) ham, cooked
  • 4 tbsp Parmesan

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat the butter in a frying pan. Chop the onion and fry it, add the garlic and mushrooms, and sauté for a few minutes over medium heat. Add the white wine, soy sauce, and cream. Stir in the spinach and melt the cream cheese. Season with nutmeg, salt, and pepper. Place the stuffing on the ham and roll it up. Place the rolls in a baking dish. Spread the remaining stuffing on the ham, covering the ham to prevent it from drying out. Sprinkle with Parmesan cheese and grill in the center of the oven at 230°C for 10-15 minutes. Serve with a side dish such as pasta. Creamed spinach can be used instead of the chopped, unseasoned frozen spinach, but adjust the seasoning accordingly. A spicy mountain cheese can also be used instead of Parmesan.
