Frozen strawberry cream

Ingredients for 4 servings:

  • 150 g strawberries
  • 30 g powdered sugar
  • 2 sheets of gelatin
  • 2 tbsp brandy or apricot liqueur
  • 250 ml whipped cream, cold

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Place dessert bowls in the freezer and chill thoroughly. Hull the strawberries, reserving a few for garnishing, and puree the rest with powdered sugar. Strain through a sieve to remove the fine seeds (but this is not absolutely necessary). Soften the gelatin in a little cold water. Squeeze out the liquid and dissolve it in heated brandy or liqueur. Add the strawberry puree, stir, and chill. Whip the cream until stiff and mix with the strawberries. Divide the cream between the chilled dessert bowls. Return the bowls to the freezer. Refrigerate about 20 minutes before serving and serve garnished with cream and strawberries. Note: If you don’t have fresh strawberries, you can also use frozen ones. But be careful with the sugar if they are already sweetened.
