Ingredients for 1 servings:
- 80 g butter or margarine, soft
- 80 g sugar
- 1 egg(s)
- 100 g flour
- 50 g cornstarch
- 1 tsp baking powder
- 600 g plum(s), pitted, quartered
- 100 g butter or margarine, cold
- 90 g sugar
- 1 packet of vanilla sugar
- 1 pinch of cinnamon (more if needed)
- 150 g flour
- Fat for the mold
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Cream the butter and sugar until creamy. Add the egg and mix well. Mix the flour, cornstarch, and baking powder, fold into the batter, and mix briefly. Spread the batter into a greased 26cm springform pan. Arrange the plums in a circle on the batter. Mix the sugar, vanilla sugar, butter, flour, and cinnamon together to form crumbles. Spread evenly over the plums. Bake in a preheated oven at 175°C (fan oven: 155°C, gas mark 2) on the middle rack for 40 to 45 minutes. The cake tastes particularly good with whipped cream. Tip: I baked using the fan oven and always put an ovenproof cup filled with water in the oven. Remove the cup 10 minutes before the end of baking so the crumbles become crispy.
